Yokohama Iekei Ramen

Feeling wanderlust and wishing you could travel to Japan? IPPUDO offers you the next best thing with its newest seasonal offering: Yokohama Iekei Ramen! This comforting bowl of ramen is made with an umami Shoyu base, a combination of IPPUDO’s Signature Tonkotsu and Tori Paitan broth, and oil.

One of the most popular ramen styles in Japan with over 40 years of rich history, Iekei ramen is a blend of different styles of broths, and was first invented by ramen restaurant Yoshimura-ya, Yokohama, in 1974.  The word ‘Iekei’ literally means “homestyle or family-style”. In Japan, customers get to tailor the taste intensity, noodle doneness and amount of oil to their own liking.

IPPUDO’s version follows the most well-loved proportions with a delicate balance of all three factors. Measuring 1.33mm, the medium-thick noodles with a springy texture are immersed in a rich base of Shoyu, IPPUDO’s Signature creamy Tonkotsu (Pork Bone) broth and the rich, milky white Tori Paitan (Chicken Bone) broth. With a thick consistency, the unctuous soup packs a delightful umami flavour and is rich with collagen.

The toppings include pork belly, as well as pork loin chashu, spinach and homemade seasoned tamago. The spicy white leek marinated with a homemade blend of spicy seasoning brings the broth to life with a touch of fiery heat. Mix it well with the soup — the ramen dish becomes highly reminiscent of IPPUDO’s famous Akamaru Motoaji.

Priced from S$16 (2pcs chashu) and S$18 (4pcs chashu) onward, IPPUDO’s Iekei Ramen will be available for a limited time from 3 February 2021 to 31 March 2021 for dine-in, takeaway and delivery.
