Award-winning chef Max Stiegl will surprise you with his edgy twist on classic Austrian dishes.

Chef Stiegl’s reputation precedes him as Gault & Millau Austria’s Chef of the Year 2021. His innovative approach to cooking, which he describes as “anarchist,” challenges the norms of traditional gastronomy. His culinary ethos revolves around sustainability where he expertly utilises every part of the animal to reduce food waste and craft delicious dishes from overlooked cuts and offal.

A celebration of Austrian cuisine but also a chance to discover the beauty of Austria as a travel destination.

The second edition of Austrian Gourmet Week is held in collaboration with the Austrian Embassy Singapore, the Austrian National Tourist Office, and Andaz Singapore.

One of the hallmarks of the Austrian Gourmet Week is its dedication to using ingredients from Austria. Typical Austrian herbs and ingredients such as marjoram and paprika will play a major role in Chef Stiegl’s five-course menu, crafting dishes that transport diners to Burgenland where he resides, right in the heart of the Austrian countryside.

Burgenland

Nestled in the eastern part of Austria, Burgenland is a captivating region that stretches gracefully from the banks of the Danube River in Vienna to the renowned Steiermark wine region in the south. One of four Austrian wine regions, what truly distinguishes Burgenland is its bountiful landscapes and the rich tapestry of agricultural treasures. With 300 days of annual sunshine and a mild climate, this land of undulating hills and vineyard-covered slopes feels reminiscent of picturesque Tuscany.

Wine has been grown in Burgenland for nearly 3,000 years and Chef Stiegl himself owns a vineyard close to his restaurant Gut Purbach. Chef Stiegl’s favourites include the refreshing Grüner Veltliner which has gained popularity worldwide as an alternative to Sauvignon Blanc, the signature red varietal Blaufränkisch, and the traditional nobly sweet wine Ruster Ausbruch.

  • SOURDOUGH BREAD – Grilled paprika, marjoram
  • RATATOUILLE – a poor man’s meal, reinterpreted Viennese vegetables
  • “OAFISH” – A traditional Austrian meal during Lent, cauliflower. poached egg. celery. herbs. crumble.
  • “RITSCHERT” – barley. beet. smoked eel.
  • CHICKEN IN THE BUBBLE – filled chicken in a pig’s balloon “Bladder” or
  • “LIPTAUER PUMPKIN” – grilled pumpkin. chilli. lime. traditional Austrian cream cheese
  • VIENNESE BREAD SOUFFLÉ – with orange liqueur. corn ice cream
