Where to Eat Now: New French Bistro and Ice Cream Parlour at Resorts World Sentosa

Tried (and failed) to snag a table at the famously exclusive Ultraviolet in Shanghai? Here’s the good news: you can finally taste Chef Paul Pairet’s culinary creations right here in Singapore.

Marking his long-anticipated debut on our shores, Chef Paul Pairet has opened Moutarde and Sundae Royale at WEAVE, Resorts World Sentosa. This time, the vibe is far more accessible: a lively French bistro for long, convivial meals, and a charming soft-serve parlour for a sweet post-dinner treat.

A Bistro Built for Gathering

True to its name, Moutarde (French for “mustard”) brings a zesty energy to the table, channelling the spirit of a contemporary Parisian neighbourhood spot. The setting is intimate and inviting—low lights, shared plates, and a layout that encourages convivial conversations.

The star of the show is undoubtedly the live carvery station, where whole wood-fire roasted cuts are carved with theatrical flair. Chef Pairet drew inspiration from his memories of classic British carving trolleys in 1990s London, reimagining the concept for a contemporary audience. The selection rotates daily- expect anything from Australian prime rib to New Zealand lamb leg and XXL turbot, all sourced and displayed in an impressive glass-walled maturation room visible from the dining area.

Dining here follows the French tradition of communal eating. Meals begin with shared plates: smoky grilled piquillos, classic eggs mayonnaise, and rustic pâté de campagne alongside lightly toasted sourdough. There’s also an oyster bar spotlighting a considered selection from Brittany, before the menu settles into comfort-food bistro classics—minute steak frites, rotisserie chicken, and grilled lamb chops served with a punchy aïoli.

There’s even a nod to Chef Pairet’s years in Asia: the ‘Buntut’ Indonesian oxtail soup, served with Mandarin rice and sambal, is apparently one of his personal favourites.

For wine lovers, there’s an added draw. The chef has collaborated with Xavier Thuizat, Best Sommelier of France 2022 and winner of the Michelin Guide Sommelier Award 2024, to create an accessible yet expertly curated programme.

Sweet Nostalgia Next Door

Step through to Sundae Royale, and the mood shifts entirely. This retro-inspired ice cream parlour is Chef Pairet’s playground for soft-serve, evoking the simple joy of sundaes from our childhoods.

All mixes are freshly house-made from original recipes. The menu spans simple sundaes to indulgent Sundaes Liégeois topped with house-made Chantilly, and textured Sundaes Crunch. Flavours like caramel-butter-soy, pistachio-cherry, and mango-raspberry Melba promise something for every palate.

Beyond the soft-serve, don’t miss the Real French Toast. Caramelised on the outside, impossibly soft on the inside, and paired with ice cream. Then there are the warm churros: freshly made and dusted with sugar, they are quite simply a hug in dessert form.


Moutarde serves lunch and dinner Monday to Thursday (11.30am–3pm, 6pm–10pm), with continuous service Friday to Sunday (11.30am–10pm). Sundae Royale opens daily from 11.30am to 10pm. Reservations can be made at dining@rwsentosa.com.

Those dining in and spending $20 or more also receive complimentary valet parking and all-day parking coupons.
