What kind of wine is a Chablis?
Chablis, made from Chardonnay grapes grown in the northern reaches of France’s Burgundy region, is renowned for its complexity, particularly the ability to transmit a sense of place and versatility in food pairings.
Not all Chardonnays are created equal, and it’s important to know that not all wines made from chardonnay grapes are Chablis. In fact, Chablis is one of the best white wines for beginners to learn about the concept of “terroir” and the choices that winemaker makes to influence the final character of the wine such as destemming the grapes or fermenting the entire bunch.
Terroir refers to how the climate, soils, and aspect (terrain) of a specific region affect the taste of wine.
New oak is very sparingly used in Chablis, except for a few producers, but even then, usually only on their Grand Cru bottlings. Chablis is also significantly influenced by the intense chalk soils of the region, which is made up of clay, limestone, and remnants of the Jurassic period 150 million years ago when the area was lay under a shallow sea.

The Dampt family is famous for its winemaking expertise and young talent Vincent is the new kid on the block. We were struck by the classic elegance and approachable style of his Chablis, counterbalancing flinty minerality and soft, creamy fruit.
On the palate, it is mildly sweet with complexity and minerality. Light-bodied and is perfect for light seafood dishes or simply as an aperitif.
2. Remoissenet Chablis 1er Cru Fourchaume (W) 2016 750ml
Maison Remoissenet Père & Fils has more than a century of winemaking history in Burgundy, France and is one of Beaune’s wealthiest domaines. Remoissenet Pere & Fils’s winemaking philosophy is wholeheartedly non-interventionist, with the grapes meticulously sorted by hand to ensure only the very best end up in the finished wine.
Fourchaume is one of Chablis’ most well-known and largest Premier Cru vineyards. The vineyard is located on the eastern bank of the Serein river, just north of Chablis. Here, the vineyard is exposed to a great deal of sunshine and has slightly warmer temperatures, along with the high-quality limestone soils, produce a distinctive Chardonnay-based wine, distinguished from other Chablis Premier Crus by its rounded lemony flavours that retain a fresh minerality. Remoissenet Chablis Premier Cru Fourchaume is traditionally fermented in stainless steel vats.
Beautiful gold colour with attractive aromas of citrus fruits and almond paste. There is well-balanced acidity accompanied by mineral, saline, stone on the palate and a lingering finish.

3. Alain Geoffroy Chablis 2018 750ml
Domaine Alain Geoffroy is a traditional wine producer located in Chablis in northern France. The family-owned estate has been growing Chardonnay in the region since 1850 and produces multiple quality levels of Chablis from Petit Chablis to Chablis Grand Cru.
Pale gold colour with greenish glints, we were impressed by its striking nose. It has intense mineral characters, with hints of citrus fruits. Perfect to be enjoyed on its own or with light seafood dishes.
This particular Chablis produced in 2018 has scored many prizes from Chardonnay-du-Monde and Concours General Agricole Paris. It is also highly rated by the Wine Enthusiast.
