If you’ve been scrolling through Xiaohongshu or Instagram lately, you’ve probably seen those towering hotpot arrangements that are pure visual spectacle. Well, Singapore foodies, I have brilliant news: Uncle Fong Hotpot has brought the trending Freshly Chopped Kampung Chicken Tower to our little red dot! And after my recent visit, I can confidently say it’s absolutely worth the hype.
Going into Uncle Fong Hotpot for the first time, I was skeptical about their Kampung Chicken Tower. I typically prefer beef and vegetables for my hotpot, so I didn’t think the chicken would be for me. I was completely wrong—it was incredibly tasty! I’d also highly recommend enjoying it with the specially prepared sauces that Uncle Fong provides.

So what exactly is in the Kampung Chicken Tower and how do you enjoy it with the hotpot? The secret is the free-range Kampung chicken. Unlike commercially-raised birds, their active lifestyle results in leaner, firmer meat with a more robust flavour. As the denser, sweeter meat cooks, it enriches the broth, elevating your entire dining experience.
At the base, you’ll find succulent chicken thigh meat that melts in your mouth. The next tier offers lighter, protein-packed chicken breast. And at the very top, there’s a selection of chicken innards and offcuts that you can poach or simply use to enhance the broth’s flavour.
Soup Bases That Actually Matter
If you are a hotpot regular, you know what really makes or breaks a hotpot experience, and that is the soup base. Uncle Fong offers two exceptional options that couldn’t be more different from each other.
The Fresh Fruit and Vegetable Broth (S$22.80 small, S$29.80 large) is a revelation. Made fresh daily with eight natural ingredients including apple, white pear, corn, tomato, sugarcane, red dates, water chestnut, and coriander, it starts as a subtle, refreshing base. But here’s the clever bit – save some of the original broth for comparison, because after cooking the kampung chicken, it transforms into something completely magical. The evolved flavours create this beautiful harmony between the fruit and vegetable essence and the rich poultry goodness.
For those who prefer their hotpot with a proper kick, the Chongqing Spicy Soup is an absolute stunner. This isn’t your run-of-the-mill spicy broth, it’s crafted from five meticulously sourced ingredients including authentic Chongqing Shizhuhong chilli and Sichuan Hanyuan pepper. The secret weapon? Lao Ying Tea forms the base, a traditional herbal tea that provides cooling properties to balance the intense mala heat. It’s properly spicy without being punishing, and the complexity of flavours develops beautifully throughout your meal.
Since Uncle Fong is part of the renowned PUTIEN group, you can expect that same attention to premium seasonal ingredients. Keep an eye out for specialities like Duotou Clams when they’re in season! It’s these little touches that set this place apart from your typical hotpot joint.
The Game-Changer: No Lingering Hotpot Smell
With so many hotpot restaurants in Singapore, what sets Uncle Fong Hotpot apart? The man behind MICHELIN-starred PUTIEN, Uncle Fong, clearly knows his stuff, and his dedication shows. Countless research trips to Chongqing have paid off, resulting in an authentic, expertly executed hotpot that isn’t just a fusion creation trying to appeal to local tastes—it’s the real deal.
I walked out of Uncle Fong Hotpot and was amazed to find that classic hotpot smell wasn’t clinging to my clothes or hair! This is huge for hotpot fans who just assume they’ll need a shower and a new outfit after a meal. I have no idea how their ventilation system works, but this is a game-changer. Uncle Fong himself says the lingering smell is usually caused by preservatives in the hotpot broth—meaning the broth here is preservative-free! This spot has definitely earned a permanent place in my dining rotation.
