I have tried other types of rice noodles in Singapore, but Miss Tang’s rendition has been a delight. Yunnan cuisine shines with its healthier approach, relying on thoughtful techniques to draw out the original, natural flavours of fresh ingredients. At Miss Tang’s Rice Noodle, every bowl of mixian (rice noodles) begins with a rich, nourishing soup base, made from pork and chicken bone broth that’s been simmered for eight hours.

If it’s your first time at Miss Tang’s Rice Noodles, I wholeheartedly recommend the Guo Qiao Mi Xian, or “Crossing Bridge Rice Noodles” ($15.90). This iconic dish is a true celebration of Yunnan cuisine, rich in history and cultural significance. Each serving is a feast for both the eyes and the palate: a wooden tray laden with ten fresh ingredients, from tender meats and crisp vegetables to quail eggs. These components are then added to a simmering copper pot of broth, slow-cooked for hours to achieve a rich, silky depth. The result is a warm hug in a bowl, marrying textures and flavours in every spoonful.
