Indulge Mum This Mother’s Day: A Seven-Course Cantonese Menu at The Black Pearl

Modern Cantonese fine dining, elevated plating, and a view that sets the mood before the food even arrives.

If you’re still on the hunt for the perfect Mother’s Day dinner, consider this your sign to look up. Tucked atop Odeon 333 on North Bridge Road, 黑珍珠 The Black Pearl is one of Singapore’s most quietly impressive fine dining destinations, and this May, it has put together a specially curated seven-course Cantonese menu to celebrate mums in style. An elegant rooftop setting and a complimentary bouquet with every advance booking. I brought my own mum along to try it, and here’s how it went.

First Things First: That View

黑珍珠 The Black Pearl - Private Dining Room

Step out of the lift on the seventh floor of Odeon 333 and you’ll immediately understand why The Black Pearl gets booked out on special occasions. The restaurant looks out over the civic district rooftops, with Raffles Hotel below and Marina Bay Sands gleaming in the distance.

Inside, expect dark, lustrous interiors, warm lighting, and a sense of occasion that nods to the restaurant’s pearl-and-imperial-banquet-inspired concept.

The Black Pearl’s Mother’s Day Menu

The Mother’s Day Set Menu ($128++ per pax, available 8–10 May) was put together by Executive Chef Dee Chan, one of Singapore’s award-winning executive chefs working in Chinese fine dining, and it shows. This isn’t your standard banquet-style Cantonese spread. Each course feels deliberately chosen, and when I asked Chef Dee about it, he mentioned that the menu leans seasonal with several ingredients were freshly sourced from China to make the most of spring produce.

Here’s a rundown of what to expect for the Mother’s Day set menu.

黑珍珠 Trio Dim Sum Platter 黑珍珠点心三拼

Kick things off with a trio that sets the bar early. You get the Mini Abalone Siew Mai 鲍鱼仔烧卖, the blush-pink Sakura Crystal Prawn Dumpling 樱花水晶鲜虾饺, and the Black Pearl Truffle Wild Mushroom Dumpling 野菌黑珍珠. All three are handcrafted and delicate, with the truffle mushroom dumpling being the standout. Not your average dim sum start.

Shark’s Fin & Sea Treasures Broth 魚翅海味羹

The double-boiled broth is loaded with premium seafood and spring root vegetables for texture and has the kind of complexity that makes you want to sip slowly. A good excuse to pace yourself.

Deep-fried Silver Cod Smoked with Osmanthus 桂花烟熏银鳕鱼

Silver cod comes out perfectly crisp on the outside, soft and buttery within, and carries the most delicate floral aroma.

BBQ Premium Iberico Char Siew 西班牙黑毛猪叉烧 (Signature)

The restaurant’s signature for good reason. Iberico pork neck is roasted and lightly smoked until it’s lacquered with a caramelised glaze, and the result is char siew so tender it practically melts in your mouth.

Poached Nai Bai and Dried Scallops in Superior Broth 瑶柱浓汤奶白菜 (Signature)

Don’t let the simplicity fool you. The dried scallop superior broth is rich and umami-laden, coating each stalk of nai bai beautifully, and that satisfying crunch from the cabbage keeps the dish feeling light despite the depth of flavour.

Stir-fried Longevity Mee-Sua with Seafood 干炒海鲜长寿面线

Long noodles for mum on Mother’s Day, the symbolism isn’t lost on anyone at the table. The mee-sua is stir-fried wok-hei style with fresh seafood, and it’s hearty and fragrant in all the right ways.

Sweetened Yam Paste with Yam Ice Cream 冰雪香芋泥

The perfect ending. The yam paste is made in-house and paired with homemade yam ice cream and a scattering of pailleté feuilletine for a bit of crunch. As fans of anything with taro, we scraped the bowl clean.

Worth Knowing Before You Book

It’s clear the kitchen puts as much thought into presentation as it does to flavour. If you’re bringing mum somewhere she’ll actually want to tell her friends about, The Black Pearl ticks that box easily.

One more thing: book at least three days in advance and The Black Pearl will provide an complimentary bouquet arrangement for the table. It’s a lovely touch that takes the experience up a notch and gives mum something pretty to bring home.
