GU:UM Mains

The menu at GU:UM categorises each dish into various natural elements; Go Greens, Land, and Sea. Under the Sea, you can opt from a choice of the Boston Lobster, Atlantic Red Prawns, Seabass and Hokkaido Scallops. At GU:UM diners are given a choice of proteins to be marinated in a selection of marinades. The selection of marinades that diners can choose from are:

  • Salted – for the purists
  • Galbi – classic sweet soy
  • Chili Gochujang – Korea’s “sambal”
  • Fermented Fish – For a taste of Jeju

* Take a look at each Main on the physical menu and the letters below the dish to see what marinade pairing is best recommended for that dish.
